You wait till the amps have tapered and then start spot checking over time. Do not stop the charge. If the bubbles are too fierce to get near the battery with your hydrometer, that's what the goggles and protective (sacrificial) clothing are for.
How else can you tell when the SG stops rising if you don't spot check? BTW, leave the caps on most of the time except when doing the SG checks. The open cell tops will spit acid more than if the caps are left on. The caps are vented so you can leave them on ok.
If the "water" overflows then that could be from a cell in poorer condition, or from starting the whole thing with too much "water" in the first place.
Add water to top up the cells to the right height after you take the final SG readings once it cools down.
