Food that has internal temp of 45F can easily "survive" with no harm to you for several hrs. It is when the food internal temp rises above 45F that it becomes a problem. It can take many hrs for food that has an internal temp far below the ambient air temp surrounding the food before spoilage will happen.
OP of this thread is monitoring air temp in a pretty barbaric caveman fridge called a RV fridge which is not a reliable means of monitoring the temps.
To get correct assessment, one must dunk the probe into something like a bottle full of water. This irons out the major ups and downs of the air temps inside the fridge giving a far more accurate picture of what is going on.
