Gdetrailer- Wow where in the world are you getting your information from? What is your source?45 deg F is a total non starter for proper food temperature holding. ALL potentially hazardous foods must be kept at 40deg F or lower period! To be clear- spoiled foods does not necessarily mean food that will make you sick. It is food that has putrified and enzymes have caused changes in the food so that it might taste and smell bad but will not necessarily contain harmful bacteria. Think cheese for instance. Trying to gauge the safety of eating foods with an internal temperature of a certain number vs an external temperature is a non starter. I'm concerned. that this information you are presenting will cause problems for people who read it and follow your ideas and WILL suffer as a result.
