First make sure all of the wire connections are tight and clean - battery posts, chassis grounds, etc. You probably have battery drains with all of the switches off which is part of the problem. Remove the ground wire on both banks or add disconnect switches on the battery wires.
My chassis battery will discharge 25% in a month and the house batteries 50% with all Monaco switches off. If the gen will start (yet another Monaco wiring problem on my rig) then use it to charge the batteries, run engine block heater and AH engine heat if so equipped.
Independent of low temps Monacos tend to have gen starting problems due to the distance to the batteries. Installing a battery up front solves that problem.
AGM self discharge is very low and starting should not require your truck, etc.
