Use the microwave & coffee at the same time. Larger bank takes the heavier loads even when at lower SOC. Larger solar array helps on cloudy, rainy days. 3rd or 4th day of poor charging on occasion the SOC might hit 28-30% (3.20v per cell) 12.8v on the battery bank, inverting @ 12.5v still making coffee or using the microwave for breakfast. If need be and there won't be any charging from solar a 1 or 2 hours hold over charge from the eu2000i will give a 100-200ah back in the batteries. Groundhog day starts all over again.
