If you turn off the gas as you suggest, woudn't the thermostat try and light the burner as temps dropped and then turn off the system after the third failed? Many thermostats have a fan only setting, I believe mine does and the thermostat I installed in my old RV did.
Goedon, A new digital thermostat should take care of the wide temp swing and excessive cool down time.
