If you can run your rig "whole house" on inverter (converter off, of course) when off-grid, then when you do have only some limited shore power, you can still operate the same way, except now use the shore power source to only run your converter (assumes a plug in converter).
The 120v high draw appliances still all work from the inverter, but now the battery bank is being "supported" by the converter so in between high draw times the battery bank can catch up.
