I would go with your original thought. Pairing a 55A IOTA with a single 100 Ah battery is not exactly the recommended installation. This turns out to be a good example of how AGMs have no quick charging benefit when typical RV converter/chargers are employed.
Also, there actually
was a "1V" drop. Below is the graph with comments at the bottom. I would call this a fairly highly unusual installation. So in most cases, the IOTA shouldn't drop out of boost/bulk so quickly.
