We also manage with no charging for four days on two batteries, discharging them down to 50% (12 volts) using just the fridge on propane, water pump, led lights and a little furnace in the mornings. That's about 80 amp hours at 12 volts. I installed a 100 watt Renogy kit with PWM controller last fall but we haven't had a trip with it yet. If I can get 10 amp hours a day out of it, we'll be able to boondock a full week.
I regret not installing a convenient switch on the panel to controller cable. The controller doesn't like having the panel connected when the battery is not, and makes a loud beeping alarm. This is a problem when parking at home - I like to disconnect the batteries when they are fully charged and now must disconnect the #10 wire on the controller.
