Absorption fridges use propane and zero electricity, or newer (last 20 years?) will need a tiny tiny amount of DC power to run the circuit board. Running absorption on DC power to heat the electric element is the very very very last thing you want to do.
I suggest to the OP to look into just using a big cooler for that once per year event.
You can get a big Yeti cooler, or get a Colman cooler and drill holes and squirt spray foam all in the cooler and lid and it will be way better.
The ice should last that Wed-Sun without issue. Then you use zero electricity for fridge, leaving the batts to power things all week without need of a charge (depending ...).
The thing on television I hate the most, besides Brian Griffin, is RV show where they make a whole show out newbie RV buyers. All the time they say, ohh, that fridge is too small, that couch is too small, I cant get all my clothes in these 3 big closets... Dumb dumb dumb, so dumb that RV manufactueres know that they can put dumb things in an RV, save money and sell RVs easier. A resi fridge is dumb dumb dumb unless you intend to park in one spot and live on an RV lot.
There are two types of fridges RVers should consider.
1. propane absorbtion fridge that will run off household 120v also (and 12v DC but that is dumb dumb dumb).
2. Danfoss compressor recreational chest fridges/freezers. These will use a fraction of the power a resi fridge will, and do not need a surge of power to start up, and you can run them way off-level unlike the #1 on the list.
