You've done a lot of work there and I would hate to see it going up in flames.
But... Other than cabinet work for converter (and associated wiring for converter and shore power input), and wiring from truck alternator to house battery, there is no custom wiring to be hidden in the walls or ceiling. Only regular 8ga wire for DC devices like fridge, lights, ceiling fans etc and 12ga (?) for 15A or 20A 120VAC receptacles.
So - close up the walls and ceiling.
I'm with Don - you should prewire your ceiling 6ga or 8ga for solar, but if you don't want to, then you'll do it later. It will be a little more work and will look a little uglier. Most people install solar on RV that are not prewired.
Edit - PS: microwave and 4 batteries.
With 12V batteries it doesn't have to be an even number. You may try 3*110 AH, AGM @12V. This "might" work with inverter type MW like Panasonic on medium-lower setting. Otherwise you'll have to start a genny every time you run MW. Or - make room for 4*100 AH. IMO, the usefulness of MW in RV is overrated.
