I am really appreciating all the feedback. I feel like I'm talked off the ledge. While it's a bit disappointing to revert to ice and coolers this trip, I'm not going to let that get me down. In fact, my wife is already adapting plans and reminding me that it wasn't so long ago that we were packing coolers, etc. We can do this.
As long as that ammonia dissipates!
I like the idea that I take the opportunity to re-figure this part of the RV setup. We are rarely plugged in and want to fit with the solar rig we have (limited roof space, but we can have 470 watts and that's not too shabby). So maybe one of those 12V units will do the trick. I like the idea of less level sensitivity too.
