Actually the thermostat on this fridge changes the amount of gas going to the main burner, which acts as the temp control.
I have owned two Dometics, one Norcold and one Servel that didn't have pilot lights, just the main burner, mechanically controlled by the thermostat. The Servel ran on kerosene and the thermostat adjusted the wick.
