Do the threads stick out enough that you can double nut the end of the threads to hold and stop the bolt from turning while you crack the mounting nuts loose? Then just unscrew the nuts by hand and reverse for reassembly.
Double nutting is when you screw two nuts onto a threaded surface and then tighten the nuts very tightly against each other. This locks the nuts onto the threads and will work as if they were a solid bolt head.
