We're out camping at the moment. I saw this at the campground and remembered all the discussion around refrigerator fires:

No argument with regard to compressor fridges vs. evaporative units. (I use a 12/24V DC compressor fridge.) They're far more efficient, consistent in temperature, and simpler to operate. However, I suspect most of the people here, and most of the people who own trailers that aren't here but who have evaporative cooling units could say the same thing you just said. Most people's fridges don't catch on fire.
Unfortunately, there don't seem to be good data available for a good statistical analysis. An anecdote is not data, and the plural of anecdote isn't data either.
