Like Mr Wiz said, parallel is less affected by shading of one panel. This is the only reason to consider parallel, in your case. For camping mostly in the open - go series.
No difference for battery health, either way.
6*6V - either your battery bank is oversized or you're using daily too much energy for a boondocker. Consider using less. High-wattage appliances don't go well with solar (or need to be run on generator, rather than on battery). Obvious question, LED lights conversion - done?
All lights are led. I think they are building toyhaulers to be in full hook ups or run the gen all the time. They are putting elec only house refrigerators and such in them. They are advancing the tech but every little bit of tech takes power. Like I said, with 2 6 volts I would bearly make it 2 nights. 6 6v made it so I can make it 4 nights with the furness on the entire time. I typically boondock in the Utah mountains or desert. I go there to get away from the noise. So I don’t want to run the gen. The only time the TVs get turned on is if I need to charge the batteries, or if I am in full hookup campground like Kodachrome basin.
