Just wanted to close out this issue for others when they do research: the gas valve was indeed the part needing replacement.
Got the part # from the old one, ordered a new one online, and installed the new one in a jiffy. I did make use of some plumber wrenches as the "tips" for the valve from the old one went on the new one. I also went to Lowes to get a new brass "elbow" to go to the LP. Tested for leaks... None. Great hot water!
