Don't take it apart- it is *not* a thermocouple, it is a mercury filled safety valve. These older oven used a 2 stage pilot flame- a low "standing" pilot and a larger "heater" pilot. The thermostat does nothing but modulate the flame, and when it calls for heat, the pilot flame should get large enough to completely envelope the bulb on the end of the safety valve capillary tube. Once the pilot flame is large enough, it can still take 15-30 seconds for the valve to open.
