A friend's Dometic was freezing stuff. I unplugged the Thermistor (that piece that clips onto the fins mentioned above) at the Control Board and tested it according to the service manual. Tested OK. I left scratching my head, what next? Friend reported "You Fixed It." What I decided was the little pins on the connector had corroded, lost contact, and when I unplugged/plugged back, must have scraped them clean.
You don't say which fridge it is, but if the Thermistor in a Dometic fails "open" (and Unplugged is the Ultimate Open), it goes to max cooling and doesn't know when to stop. Can freeze the fridge section.
