There is no reason you can not be using both shore power and solar at the same time, solar providing the bulk of the power. Fixing the solar set up is however important and the first step is figuring your voltage drop, http://www.southwire.com/support/voltage-drop-calculator.htm
Since you have an MPPT controller go with series on the panels and get the voltage up.
