In my conversion it was easy.
One of the leg of 50 amp service was for 2 AC and other for 3rd AC and rest of the house.
I sense that you hesitate to use inverters at their power.
On several set ups I was using big inverters with single battery.
Probably the most drastic was my boat, where 1200W inveter was powering 1500W oven from small battery and 30 amp alternator.
It would overheat after 7 minutes, but that was all I needed most of the time. If not, you have time to spare on boat, so give it few minutes to cool down and restart again.
Other thing is that appliances ratings are often overblown.
I measure the 1500W space heater to use only 1240W.
