You can install a thicker cable from battery to inverter.

Check your AC line, there can be too much resistance there.
You can run a 3000W generator for 1500W microwave, though this would be an overkill and a bit of nuisance, having to run it every time.
I wonder what you need microwave for. There is nothing that can't be done on a gas stove if you have to. This could be another solution.
