Your mentioning current truck trailer moves in the wind. Is that a side to side rock? Or fishtailing behind? If side to side, no big, you're going to get that with an 8 lug truck too. I moved a half a lane going across I205 in Portland getting hit by the 60-80mph side winds with my trailer in tow once. That was a 9200 gvwr SW 3500 diesel crew cab!
I should mention I looked at Toyotas too. Issue with them as mention, thirsty! I'm computing more than towing hauling.....I was going for the motors that got me 18-25 mpg. Toyota does come with a 10.5" rear diff, vs mostly 9.5" with others. Although the GM 4 3 like I have, came with a AAM 10 bolt 8.5" rear. The V8s come with a 9.5, same as some 2500's I've had.
With Ford, watch the axle ratings, they have a lot of options. For my use, the 2.7EB looked very promising towing my 6500 lb equipment trailer. But I could not find any with a 3500-4000 lb RA. If you can find one, as noted, quite powerfully, good at elevation due to turbo, decent mileage empty. Towing like any of the gas rigs, 8-12 on bad/good days etc.
