It almost seems like fuel starvation so I was thinking a bad fuel filter, but giving it full throttle seemed to help so that didn't make sense.
Also, I got an amber "wrench" symbol on the dash, which I assume maint. req.
I made it home and turned it off and restarted it and the wrench symbol was gone.
I haven't driven it again yet so not sure if it still does it.
Any ideas or common issues on the V10 that would cause this?

Good chance it has nothing to do with fuel system.
Intermittent fuel pumps often simply refuse to work when hot, like stopping somewhere after driving a while then no restart..
Clogged fuel filters don't fix themselves so I would rule that out.
The most likely culprit is the COPS (Coil over Plugs), you most likely have one of them going bad and they are a real pain when they start going bad.
The easiest way to find the bad one is to buy a new one and use it one every cylinder one at a time until you locate the bad one.
COPS may or in my case may not set the CEL but it can leave a misfire code on the computer sometimes.
Before randomly changing parts I would suggest taking it somewhere that can RELIABLY scan your vehicle to find out the codes...
