When the engine dies it could be the cam sensor. Also don't skip on servicing the transmission and perhaps the rear differential. We only use Motorcraft filters on our 7.3's. Also the oil coolers can start leaking with old age so get that checked out. They can be rebuilt.
Cam position sensor is not intermittent, when it goes bad the engine does not restart. Think about torque converter or injection control pressure sensor issues as a cause for the stalling
