I'm sharing this for the lurkers, not the OP. I have my first trailer and we're still working through stuff like this and learning our lessons.
First, we "learned" we cannot latch or unlatch the coupler lock if our Andersen WD hitch is engaged. The same is probably true with other WD systems.
Next, we're having to be very careful about side-to-side pressure before lifting the tongue off the ball. We had a couple of bad scares of the tongue jumping sideways as it comes off the ball, luckily no injuries or damage.
I'm pretty sure we've mostly created this issue while leveling our TT. But just in case, if we can, we roll forward and backwards some to take any tension out of the 2 axles. I'm also now biased towards lego leveling blocks rather than my 3-stage ramp. And we're trying to make sure we have chock pressure on both left and right sides before lifting the tongue.
