With a 3.73 rear axle that jumps to 8,100 lbs (either wheel base) but I would want the Trailer Tow Package and the 2.7L EcoBoost Payload Package.

Concur on the trailer package.
One possible meaning of the "-" in the 2017 guide you link to is the 4X2, 2.7, 3.55, CC combo was not offered as an option in 2017. Otherwise the dashes don't make much sense. Think about it, look at the Table, a given configuration at XX,XXX GCWR can tow Y,YYY pounds but the same configuration at a GCWR of XX,XXX + 100 has a "-". Does this mean it is not recommended to tow anything? I suspect it means that combination was not offered that year.
I think a more probable interpretation is the combination of an F150, 4X2, CC, 2.7, 3.55 was not offered in 2017 hence the "-". In 2018 it was offered hence the 7700.
