I suspect the 26 bunkhouse will put you overweight somewhere (towing capacity,hitch weight or CCC) once loaded up. That 5000 lbs trailer is likely closer to 7000 lb fully loaded. So not totally impossible, especially with a HEMI, but it will be close.
I'd worry about sway with that combo since that trailer is approaching the limits a Durango could handle. I suggest getting a good WDH with sway control, like Equalizer or Husky Centerline to keep things in control.
Our friends tow a similar sized trailer with a 2005 Dakota with the 4.7L V8. He can tow it fine, but not all that happy with the performance.
