A bad u-joint can be felt if you have the hubs locked and crank the wheel hard in one direction or the other. With one or both sides in the air, spin the tire, if its a bad u-joint it will stop the tire from spinning and resist you. I have one that seems to having intermittent problems as you described. Randomly (very random) the truck will pull to the right and not easily return to center. I have not had the time and weather to verify if its going bad, but I pumped it full of fresh grease and even though I did so 3 months ago I still got 6 pumps into the joint before there where signs it was full.
