You're missing the most important numbers, the "payload" rating of your vehicle and the tongue weight of the towed trailer. If you're considering towing of a larger trailer, the tongue weight may exceed the payload rating of your vehicle with occupants, fuel, and gear hauled in the Escalade.
A quick search lists your payload rating as around 1400 lbs. Assuming a trailer weight of 7000 lbs. and typical tongue weight distribution of 13%, the tongue weight would be 910 lbs. That leaves around 500 lbs of payload for everything in the Escalade. You would also be at the maximum and that is a topic for further discussion.
