Think about using the Home Depot R-Maxx polyisocyanurate foam instead of the pink or blue stuff. It has a foil cover, is more fire resistant and I think has a higher R value. It may be cheaper too. I do believe it only comes in 1/2" 1" and 2" thicknesses though.
Re jacks, you might consider building a steel backplate with welded nuts into the frame so you have a easy way to remove them if that is your plan. I went with a complete plug/socket system that allows the jacks to be installed in under 10 seconds each but that is overkill for a 800 pound camper (btw, it won't be 800 pounds when you have water and gear in it).
