Mine does the same thing and has done it since it was new. I think it's part of the emission control. If I suddenly take my foot off of the go pedal and then suddenly mash on it, it will always take a couple of seconds before it will respond. I don't think there's anything wrong with your truck.
No that's just the crappy torque management and deal pedal issue.
