As mentioned, Tow haul is your best bet while towing. Changes a couple computer control settings to improve towing performance.
As for all the gauge options, with the newer trucks you don't really need to monitor them except to notice if they are getting up to the red zones. The computers will warn you if anything gets out of whack, and should the tranny start overheating, or something along those lines the computer starts de-tuning the engine etc. to try and prevent you from doing any harm. That said, I really like knowing what temps I'm running, especially with the transmission and engine oil.
