Sometimes people tow trailers that aren't RVs. It's pretty easy to adjust a load on a utility trailer to take you up to the max tow weight without exceeding the carrying capacity of the truck.
I believe the point was that since these trucks are getting so capable, that using a high profile RV would make them work harder...Possibly making them unable to exceed the speed limit.
It isn't all about weight. Wind resistance can be an important factor.
