Well in 9 pages I haven't seen it asked or mentioned, but what is the OP`s gear ratio in the axle? I`m betting it`s in the low 3`s. From his description I`m betting 3.23 or so.
The 5.7 Armada shouldn't even sweat with a 5k lb TT behind it going uphill with the right gearing! I don`t know what trans an 06 V-8 Armada has but it cant be more than a 5 speed. For towing with that truck you will want 3.73 or 4.10.
