I know where your going but to answer your question it's mostly I10 driving both east and west directions.
Here's another picture of the same basic trip on winter diesel. But I consistently get very good mileage from this truck.
You must be a slow driver because the first one shows an average speed of 50 mph and the second shows and average speed of 54 mph which is consistent with the mileage you got.
Going from San Antonio to Houston, the best I ever got was 17.5 mpg (hand calculated/not lie-o-meter) with an average speed of 71 mph. I was doing 78 most of the way, but had a few stops along the way at Buc-ee's and Halletsville which brought my average speed down.
