A large displacement turbocharged gas engine would need a HUGE cooling system to keep it cool in a towing application. Especially one that has a closed deck block like the 7.3L. The radiator would probably need to be the size of a medium-duty Peterbilt.
Every time that I have seen trucks with similar power diesel and gas engines offered the diesel has the larger radiator. I have done a lot of towing with gas engines over the past 45 years and never had heat issues with one that was factory equipped for the job. The high hood on the current GM pickups seem to be driven by the cooling needs of the diesel, not the gas engine.
I think that the cooling needs of the gas engine could be managed without much of an issue and I suspect that most of the historical issues with gas engines overheating was due to people trying to go with a cheap substitute for a diesel rather than a good one.
