The use of Z brackets make removal difficult. Better to use 2 pieces of aluminum angle and a bolt.
No for the deflector. An airplane wing has more air flow over the top to provide lift and you don't want lift.
I'd use VHB tape and screws, some use only VHB tape.
BTW I buy all of my SS bolts and screws from Bolt Depot. MUCH lower cost in quantities of 100. All of my screws are square head drive which don't strip like Phillips.
