I am almost betting your problem isn't so much condensation as it is a leak in the gasket and/or a sagging roof that creates a "lake" on the roof rather than running off as it should. About the only thing that would allow condensation to cause your problems is a very strong AC with a minimally insulated ceiling so the cold air interacts with the hot roof. Don't know as there is a lot you can do to correct it if that's your problem. Opening vents to allow some air movement may help it.
