The KOA in Lincoln City is a nice spot that you should be able to get into with little or no reservation. It's nothing spectacular and is 5 minutes inland from the coast but is a nice place to explore from.
The highway isn't really a problem. Running through the big cities midweek would be preferable if you have the choice. There are plenty of nice big pullouts along the way. Just not many right in the big cities. IMO, the most beautiful part of the drive is between Depoe Bay and Newport.
I'd definitely take it in groups... north coast - Astoria, Seaside, Cannon Beach, Tillamook day 1, Tillamook to Lincoln city there isn't much to see. Lincoln City, Depoe Bay, Newport day 2. Then on from there for day 3+.
Restaurants and attractions:
Lincoln City - Kilos, Mo's, nice set of outlet mall shopping, Chinook Winds Casino if that's your thing (good RV dry RV parking in their lot).
Depoe Bay - Tidal Raves
Newport - The Bay front is nice, also another Mo's if you didn't catch it in Lincoln City
