As others have posted your coolant temp shouldn't move much even with a hot hard pull.
I have a 15,000 5th wheel I used to tow it with a truck rated at 10,000 lbs for a 5th wheel. The only times the coolant pegged were if the fan clutch wasn't working properly. Happened twice within a few months. I replaced the first fan clutch and a few months later it stopped working so I replaced it with a heavier duty aftermarket clutch. No problem since.
During this time I discovered the factory temp gauge was 20 degrees off. I added a autometer gauge to get an accurate reading.
Royal Purple makes a product called Wetter Water you can get it at auto parts stores. It will reduce the coolant temp by 20 or more degrees during a hard pull. It works great.
