If you pause at 0:22 on Wagoneer's video, you can see the left hinge arm that attaches to the bottom center left of the mattress platform.
There are two of those on the underside of the mattress, one on the left and one on the right, with a small space in the middle (Also visible in the above link).
Everything else is joined using piano hinge.
The flower petal pattern of the sides will the the harder part to reproduce as they're hinged on an angle so that they will automatically fold in when the bed is folded up.
