1. Does the F150 crew with V8 and either 3.55 or 3.73 rear axle and tow package have adequate payload/tow capacity to handle our trailer? When we travel, just the two of us and the cat, so we wouldn't be contributing much addition payload to the combination.

Use Fords spec and play around with it. Lots of different engine options/gear ratios/GVWR/RAWR package on the F150 for a 10k trailer and under.
The newer F150's with 7850-8200 GVWR and higher RAWRs isn't our grandpa's old 1/2 ton truck......hmmm I'm a great grandpa so include my gen in there also.
