We have a dometic and it works from sea level to 11,400 without any adjustment. So do our other appliances. I would not get into adjusting a pressure regulator for high altitude, it should work automatically at higher altitude.
Why doesn't the refrigerator do the same thing during the day? Is your regulator sensitive to cold? Have you had this problem in the spring or fall? We have had trouble with our regulator at -29 below, your temperatures are a far cry from that temperature, but the regulator could be just cold enough to slow down the flow of gas initially to the refrigerator and that is too slow for the refrigerator sensors.
My suggestion is to make sure that your orifice is clean and check out that regulator.
I was thinking the same thing. My Dometic runs fine from sea level to high elevation.
