To answer the first question yes the gm 6.0, ford 6.2 and ram 6.4 will all get your trailer to your destination.
Of the three the new ram 6.4 will likely provide the best towing experience but all of them will get the job done.
Just know that these engines make their peak power at 4500 rpm and up. It doesn't hurt them a bit to run the rpm up there when climbing a long grade but it makes some uncomfortable thinking they are hurting it.
