I don't have the ecoboost, but I do have an 05 F-150 4wd Scab with the 4.6 v8. It has a payload of just under 1500lbs, but I carry a 1400lb 8' hardside pastime camper just fine with the Timbren SES' on it. It has a fridge, oven/stovetop, sink, heater, and I throw the tiny little microwave from our kitchen in if i'm going to be at an RV park.
I also tow an ~2700 lb sailboat/trailer combination just fine. I'm over my GVWR, but with careful planning i'm still within axle ratings, and GCVWR. I'll probably eventually throw some LT tires on it when the stockers go bald, but i'm not in any hurry, the stockers have more than enough capacity, but some LT's might just give me a slightly more stable feeling. Though I had no problem climbing up and over Blewitt pass towing my boat and enough "stuff" for a 4 day weekend.
Yes, I've weighed things at a truck scale so my numbers should be fairly accurate.
You can do it, you just need to be honest with what you NEED in the camper. I have no toilet/shower, just a porta potti, and when towing I throw as much "junk" as I can into the boat.
If my 4.6 v8 can handle all that, i'm fairly certain the ecoboost should be able to handle it just as well. And the newer scab's have a higher payload than mine does as well.
