Backing with stabilizers
I have heard that you cannot back with stabilizers on. I expect no sharp turns but doesn't seem reasonable not to be able to back with them on. What's the truth?

It all depends on which hitch you are using. I have an Equalizer brand hitch that does not require detaching the stabilizer bars; I've actually jack-knifed it several times without any issues.
