Most of these computer muffin fans can be controlled with a potentiometer. I see the Silverstone even comes with one. To mount it, a hole to accommodate the shaft size (1/4" typically) drilled in the fan canopy is all that is needed. If your stove vent hood has a rotary switch, now, you can replace that with the fan's potentiometer.
Antec, Noctua, and Coolermaster are all good brands of fans and have different sizes available. I've used all of them in different air-moving applications and they all perform well.
Since our travel trailer 12V systems can often rise above 13V when charging the batteries, a potentiometer on the fan circuit is a good fail-safe. A resistor or diode in the circuit would serve a similar purpose, limiting voltage to a lower level.
