EDit: BTW, I had a suggestion. When you get to wiring the off-grid cabin, pull 14 ga throughout and 12 ga into the kitchen area. The price of the wire will be negligibly higher than smaller DC wire you could use but later, if 120V becomes available through solar and inversion/generator, your circuits will be able to handle the load.
FWIW, we once stayed at an off-grid resort where power was only supplied for a few hours a day, just long enough to cool down the fridge and contents. Lights were oil lanterns. That was one of the best stays,ever.
