The price of the wire will be negligibly higher than smaller DC wire you could use but later, if 120V becomes available through solar and inversion/generator, your circuits will be able to handle the load.
FWIW, we once stayed at an off-grid resort where power was only supplied for a few hours a day, just long enough to cool down the fridge and contents. Lights were oil lanterns. That was one of the best stays,ever.

Very good idea on the wiring. Not expecting much wiring, but wouldn't take much to do it.
The off-grid sounds like a great time!
